Located in The Morgan Resort at Maho Beach, SALT Restaurant is fine dining – the perfect destination to celebrate Mother’s Day in style this Sunday, May 10.

Featuring live music and an elegant Caribbean ambiance, SALT offers a memorable dining experience designed to honour the special women in your life. Executive Chef Derio Boyce has curated an exceptional 3-course dinner menu, combining refined flavours with locally inspired ingredients for an unforgettable evening. Guests will enjoy live entertainment from 6:00 to 9:00pm, creating the perfect atmosphere of relaxation, celebration and sophistication.

The Mother’s Day special includes a 3-course dinner for $65 per person (plus service charge), along with a complimentary glass of Prosecco to toast the occasion.

3-COURSE DINNER MENU

Appetizers (choose one)

  • Kale & Spinach Caesar Salad – Baby kale and fresh spinach tossed in creamy Caesar dressing, shaved parmesan, and garlic herb croutons.
  • Local Catch Ceviche – Fresh island fish cured in vibrant green herb leche, with shaved red onions, Fresno chili, creamy avocado, and sweet potato crisp.
  • Coconut Butternut Squash Velouté – Roasted squash, herb oil, and shaved parmesan cheese.

Main Courses (choose one):

  • Chef’s Signature Creamy Lobster Mac Pie – Butter-poached lobster baked with pasta in a rich four-cheese blend, finished with herb bacon panko crust.
  • Caribbean Spice Rubbed Tuna Steak – Served with forbidden black rice, passion fruit-pineapple salsa, and charred greens.
  • Herb Roasted Chicken Thigh – Boneless chicken thigh with spinach gnocchi in creamy basil pesto sauce, finished with shaved parmesan.

Desserts (choose one):

  • Strawberry Almond Pavlova Heart – Topped with vanilla chantilly cream, fresh strawberries, coulis, and toasted almond crumble.
  • Raspberry Lemon Gateau – Lemon sponge cake layered with raspberry preserve, citrus mascarpone cream, and fresh berries.
  • Brûléed Basque Cheesecake – Caramelized cheesecake with mango passion fruit compote and fresh berries.

In addition to the dinner celebration, SALT will also be offering delicious breakfast specials on Mother’s Day morning. Highlights include indulgent Biscoff pancakes layered with Biscoff cream and crumble, as well as savoury options like avocado toast with smoked salmon, poached eggs, and fresh accompaniments all served with a complimentary mimosa.
