Sugar and Spice: Pancake Cereal

Fellow dessert lovers, unite! Calling everyone with a sweet tooth to this DIY edition of our island-wide hunt for St. Maarten’s best dessert!

Move over banana bread, step aside dalgona coffee. There is a new viral recipe in social distancing town – everyone on social media seems to be making pancake cereal – and, of course, Sugar and Spice could not stay behind, so it was time to head back into the test kitchen to see if this new sweet treat trend was worth the hype.

The recipe is easy yet fun. It is literally just a bowl full of miniature pancakes. Anyone can make them; just keep in mind that this treat will take a bit longer to make than regular pancakes or cereal. But I guess that is part of the appeal – a fool proof yet time-consuming recipe with insta-worthy results – and one that actually tastes really good!

To be honest, I was a bit hesitant at first as I thought it might get soggy or taste bland. But I was pleasantly surprised –the “cereal” was actually crispy and paired perfectly with some frozen berries, brown sugar, and almond milk for a deliciously sweet and special breakfast. Oh, who am I kidding! I could eat this all day any day. Pancake cereal is well worth the effort – a little really does go a long way.

Of course, the Out ‘n About is aware that the current measures may affect your access to certain ingredients. Please know that the ingredients are pantry staples in our house, but we understand you might not be able to recreate recipes at home. Either way, we hope to bring you some sweet distraction and maybe some DIY dessert inspiration.

But if circumstances permit and you happen to have the ingredients or are willing to get a little creative with whatever you might have on hand, this pancake cereal will be sure to brighten up your day. In my opinion, that is the best part of baking or cooking – you can take a recipe as inspiration and experiment with it.

Pancake Cereal

(3-4 servings)

Ingredients

(Use your favourite pancake mix or make your own batter using the following)

  • 1.5 cups of flour
  • 1 cup milk
  • 2.5 teaspoons baking powder
  • 1 egg
  • Pinch of salt
  • 3 tablespoons of oil or melted butter
  • 1 teaspoon vanilla essence
  • 1 tablespoon sugar
  • butter or oil to fry

Optional toppings

  • Sugar, (maple) syrup, honey
    • Any kind of milk or yoghurt
  • Whipped or ice cream
  • Chocolate chips
  • (Frozen) berries
  • Fruit
  • Nuts
  • Cinnamon
  • Cocoa powder

Directions

If making your own pancake batter:

  1. Mix all dry ingredients in large bowl and mix all wet ingredients in a small bowl. Pour the wet ingredients into the dry ingredients and whisk until combined.
  2. Pour pancake batter into a condiment squeeze bottle or fill a Ziploc bag and cut a tiny whole in the corner.
  3. Heat pan to medium high heat and grease with butter or oil.
  4. Squeeze small pancake dots and cook until the top is dry and forms bubbles.
  5. Toss the pancakes with a spatula and cook for a few more minutes. Occasionally toss the pancakes around to help cook more evenly.
  6. Top with whatever you like. Some people like to add their favourite milk, others prefer the more traditional butter and syrup, so don’t be afraid to play with different toppings.
  7. Smile and enjoy. And don’t forget to take a picture to show the world that you too conquered the viral pancake cereal!
