Cocktail or Mocktail? Enjoy!

Cocktail or Mocktail? Enjoy!

Keep it cool; Keep it Caribbean; Enjoy the vibes!

If you’re visiting Pineapple Pete in Sint Maarten or want to prepare yourself a refreshing summer cocktail to combine with the tropical vibes and island cuisine, here’s a perfectly balanced, fruity-yet-fresh cocktail recipe inspired by the Caribbean!

Caribbean Breeze Crush Cocktail

Ingredients

  • 2oz light rum (Bacardi or a local SXM brand like Topper’s Rhum)
  • 1oz coconut water (for hydration and a lighter mouthfeel)
  • 1oz pineapple juice (fresh if possible)
  • 1oz passion fruit juice or puree
  • 0.5oz fresh lime juice
  • 0.5oz orange liqueur (like Cointreau or Grand Marnier)
  • Splash of club soda (optional for a spritz finish)
  • Crushed ice

Garnish

  • Pineapple wedge or leaf
  • Mint sprig
  • Optional: rim the glass with toasted coconut flakes for a fancy touch

Instructions

1: In a shaker, combine all ingredients except club soda.

2: Shake with crushed ice until very cold.

3: Pour into a tall glass (or tiki mug) without straining, island-style.

4: Top with a splash of club soda if you want it extra refreshing.

5: Garnish and serve immediately with a straw and a smile.

Why it works

  • It complements Pineapple Pete’s tropical flavours like seafood, jerk dishes, etc.
  • The passion fruit & pineapple combo is a Caribbean classic.
  • Coconut water lightens it up and makes it not too sweet – perfect for summer heat.
  • Looks amazing in photos and tastes like vacation.

Island Glow: Mocktail

Ingredients

  • 2oz coconut water
  • 2oz pineapple juice (fresh is best!)
  • 1oz passion fruit juice or puree (or mango if unavailable)
  • 0.5oz fresh lime juice
  • 0.5oz orange juice (instead of orange liqueur)
  • Splash of club soda or ginger ale (for a fizzy twist)
  • Crushed ice

Garnish

  • Pineapple wedge or wheel
  • Mint sprig
  • Optional: rim the glass with sugar + lime zest

Instructions

1: Add all ingredients except the club soda into a shaker with crushed ice.

2: Shake well until chilled.

3: Pour everything into a tall glass.

4: Top with a splash of club soda or ginger ale.

5: Garnish and serve with a straw or paper umbrella!

You can batch this in a pitcher for beach days or BBQs. Just add the soda right before serving to keep it bubbly! Most importantly, stay hydrated and stay happy!
